INGREDIENTS
- 1 cup parboiled rice/old rice
- 1 cup cooked chicken cut into small chunks
- 2 tbsp olive oil
- 1 large onion chopped and divided into 3 parts
- 4 tbsp soy sauce
- 1 tsp dried pepper flakes
- 2 garlic cloves paste
- 1 tsp fresh ginger paste
- 1 tsp salt/to taste
- 3 eggs lightly beaten
- Handful of shrimps washed and veins removed
- 3 drops soy sauce
- Lettuce leaves washed & shredded
- 1 cucumber peeled, seeds removed and cut in long strip
Dressing
- 1 tbsp olive oil
- 1 tsp apple cider vinegar
- 1 tsp lime juice
METHOD OF PREPARATION
- Place wok over medium heat add 1 tbsp olive oil and swirl to coat; add 1 part onion, 3 drops of soy sauce , pinch of salt to egg mix properly. Add mixture to pan working quickly, Swirl pan until egg is set and puffed. Flip egg and cook on other side briefly, remove egg from wok and chop.
- Add shrimp to wok and stir fry until it changes color and shrimp is a bit crispy about a 1min. Remove from wok and place on a serving plate.
- Add remain olive oil to work add 1 part onion, ginger, garlic and stir continuously for 10 seconds watch carefully so it doesn't burn. Add pepper flakes, soy sauce, chicken to wok and stir properly to coat ingredients.
- Add parboiled rice and salt to wok, tossing to mix well and stir fry for 10 minutes or until ingredients are fully incorporated.
- Toss lettuce and cucumber with dressing
- Serve hot with a side of chopped eggs, shrimp, onion and salad.
