INGREDIENTS
- 2 large crabs
- 3 tbsp vegetable oil
- 4 tbsp dark soy sauce
- 1 medium onion chopped
- 4 dried red chillies soaked
- 2 tbsp sweet chilli sauce
- 1 tbsp tomato paste
- 1/4 tomato sauce
- 2 garlic cloves minced
- 1 inch root ginger paste
- 1 tbsp sugar
- 1 tsp salt / to taste
- half cooking spoon water
- Fresh plantain leaves
METHOD OF PREPARATION
- Remove the crab's top shell and chop the crab into quarters. Crack the claws to allow the flavors to penetrate. Remove the juicy and gray gills and save.
- Place chopped onion and chilli in a food processor and process to a paste.
- Add oil to wok place over medium-high heat and heat until slightly smoking. Add crab and stir fry for 5 minutes till crab is cooked and shell turns red; meat will turn white when done.
- Add the onion and chilli puree, ginger and garlic fry until fragrant about a minute. Add the tomato sauce, tomato paste, soy sauce, sweet chilli sauce, saved juicy and gray insides, sugar, water and salt; mix through. Stir fry for 5 minutes to fully Incorporated ingredients.
- Remove from heat and arrange on Plantain leaves. Serve warm
