WEEKEND SPAGHETTI AND MEATBALLS
Spaghetti and meatballs is a fantastic and low cost recipe that is quick and very easy to prepared. I prepared this recipe as a weekend dinner, I sometimes like to spend as little time as possible in the kitchen; if you share the same views then this is one of those recipes that will help you accomplish that.

INGREDIENTS
Tomato Sauce
  • 2 tbsp olive oil
  • 1 Large Onion chopped
  • 2 Large garlic cloves, minced
  • 5 Large fresh Tomato, finely chopped
  • 1 medium tin tomato puree
  • 1 tbsp curry powder
  • 1 tbsp fresh scotch bonnet pepper paste
  • 1 tsp salt
  • 1 seasoning cube(knorr)
  • 1 pack whole wheat spaghetti
MEATBALLS
  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 pound minced meat
  • 2 tbsp dried plain bread crumbs
  • 1 tsp paprika
  • 1 tsp salt
MODE OF PREPARATION
  1. To make sauce, heat oil in large pan over medium heat. Add onion and garlic; cook, stirring until onion is softened about 3 minutes. Stir in fresh tomato and cook for 5 minutes.
  2.  Stir in remaining sauce ingredients; cook stirring occasionally, until sauce is slightly thickened for 15 minutes.
  3.   Meanwhile to meatballs,heat oil in large non stick pan over medium heat, add onion stirring for about 1 minute; add half of the minced meat. Stir until the mince is heated through, cook uncovered if necessary until all liquid evaporates.
  4.  Combine the cooked mince with the rest of the ingredients, including raw mince.
  5.  With damp hands form mixture into 12 golf size balls and place on baking tray lined with baking sheet/foil. Bake until brown and cooked through, about 15 minutes.
  6.   Meanwhile cook spaghetti according to package instructions, omitting salt if desired. Drain
  7.  Add meatballs to Tomato sauce; cook stirring occasionally until heated through about 9 minutes.
  8.   Combine sauce with spaghetti thoroughly.
  9.  Serve hot or warm.
SERVING IDEAS - Serve with a side of coleslaw salad or fried ripe plantains
