HOW TO MAKE  NIGERIAN SMOKED FISH JOLLOF RICE

Nigerian Smoked Fish Jollof Rice
 Nigerian Jollof rice is a easy and tasty recipe that can be made by both the experience and newbie cook. It's the most popular delicacy in nigeria prepared in almost every household and you find it at party events menu. There are different variations to this dish and you can use fish, chicken or beef. I used dried smoked croaker fish for this recipe and it gave this a distinctive flavor; smoke iced fish or catfish is also a good option.

INGREDIENTS
  • 2 cups parboiled rice
  • 2 smoked croaker fish de-boned and torn apart in medium pieces
  • 1 cooking spoon vegetable oil
  • 1 large onion chopped
  • 1 medium tin tomato paste
  • 1 cup ground fresh tomato
  • 2 tbsp ground scotch bonnet pepper
  • 1 tbsp curry powder
  • 1 tsp dried thyme
  • 1 season cube knorr
  • 1 tbp salt or to taste
  • 3 cups chicken stock

    MODE OF PREPARATION 
    1. To make sauce, heat oil in large pan over medium heat. Add onion cook, stirring until onion is softened about 3 minutes. Stir in ground fresh tomato, scotch bonnet pepper and cook for 5 minutes then add tomato paste and cook for 5 minutes stirring until the sour taste is gone.
    2.  Stir in remaining sauce ingredients; smoke fish, curry powder, thyme, seasoning cube(knorr), salt cook stirring occasionally, until sauce is slightly thickened and oil rises to the top for 10 minutes.
    Jollof Rice Sauce
      3. Lower heat and add the parboiled rice to the tomato sauce; combine thoroughly with rubber spoon and add chicken stock to cover rice slightly.
      4. Cook on high heat for 10 minutes then lower heat to the least and cover; cook until the rice is soft and water is dried.
      5. Serve hot or warm.

      SERVING IDEAS - Serve with a side of coleslaw salad or fried ripe plantain
