NATIVE SOUP

RIVERINE NATIVE SOUP
NATIVE SOUP
Native soup is One of hubby's all time favorite and also a favorite of the riverine residents. It's usually prepared with fresh seafood and a thickner is used.


For my version am using a combo of dried items & fresh periwinkle. I used ofor as thickner but you can also use boiled pounded cocoyam or ground achi. The  Fresh uziza leaf gives it a distinctive flavor which makes this soup a must try for every foodie........it doesn't get any better than this.

INGREDIENTS
1 cow head cut into medium chunks
2 large Kpomo cut into small cubes
3 meduim dried fish deboned
2 cups fresh periwinkle 
Half cup ground dried crayfish 
4 tbsp grounded ofor (thickner) 
2 bunches Uziza leaves finely chopped
3 tbsp ground fresh chili
1 large onion chopped
1 cooking spoon palm oil
2 seasoning cubes (Maggi)
3 cups of beef stock
Salt to taste 

METHOD OF PREPARATION
1. Add cow head to a medium pot with one litre of water and set over heat cook until meat is soft about 40mins; due to my choice of meat it takes a longer time to get soft. Add kpomo, dried fish, half chopped onion, 1 Maggi, 1 tbsp chilli and salt and cook for another 5 minutes.
2. Set medium pot over heat, add palm oil and sauté onion and chilli for 10 secs, add all ingredients in step one above and add 3 cups of beef stock. 
3. Add periwinkle, remaining chopped onion, crayfish, seasoning cube and pinch of salt to taste. Allow to cook for 15 mins.
4. Add thickner(ofor) little at a time, till desired thickness is achieved. Stir properly to dissolve thickner and incorporate ingredients. Simmer for 5 mins.
5. Add chopped Uziza leaves , combine and simmer for 2 mins. 
6. Stir, remove from heat and serve with desired swallow.

SERVING IDEAS - serve with pounded yam, starch, wheat, semovita or Eba.
